Slettevollen Farm Dairy
Slettevollen Gardsysteri, located in Brekke by the Sognefjord, processes milk into cheese and sour milk products.
They produce varieties such as Salad Cheese, Frying Cheese, Oskepott, spreadable cream cheese, yogurt, and sour milk. Previously, production was carried out in a rented kitchen with limited capacity. From the autumn of 2023, they will have their own dairy on the farm, which means that a larger portion of the fresh milk from their own cows will be transformed into cheese and other local milk products.
In this family-run business, Cathrine is responsible for cheesemaking and quality control, while Håvard takes care of milk quality, feeding, and animal welfare. They have a close collaboration that ensures high-quality products. Other family members, especially some of the boys, are involved in caring for the calves. The barn has been converted to a loose-housing system, where the cows decide when they want to be milked. In the summer, the dairy cows graze on green grass down towards the sea. The farm emphasizes the use of local feed to maintain milk quality, and in winter, the roughage consists of ensiled grass from Brekke.
Furthermore, Cathrine has a great interest in kitchen gardening and grows garlic and herbs that are used for marinating the salad cheese locally on the farm or are picked from nature.
